It now carries just four passengers in ultimate comfort and style. It's new rating is Ultra-Deluxe.
was re-configured from three cabins to two - and was upgraded with "French country
style" design scheme augmented by amenities expected by the upscale traveller.
The big and beautiful staterooms are outfitted with satellite TV, DVD, a phone itercom
system - while the decor reeks of luxury - Italian Linens dress the beds. Hand-cut tiles
line the bath.
In the Salon is Grange furniture and solid oak floors. Like in the cabins, the "look" is
light, colorful, airy. A computer with unlimited internet access connects this lovely
cocoon to the outside world!
The 2008 crew of four featured Pilot Luke who has driven all five vessels in the
Orient Express fleet and "Aussie" Chef Angus who has lived, trained and cooked in
France for many years. He delighted his guests by sharing "tips" while cooking in Alouette's open "Demonstration Kitchen!"
Included in the itinerary are the top sights of the Midi - as well as many opportunities
to walk or hike on the towpaths lining this tree-lined canal.

Enjoy a relaxing breakfast as you take in the grandeur and beauty of the Canal du Midi, with its fine locks, buildings and aqueducts, scarcely changed from their completion over 300 years ago. During the morning, there will be chance to return to the kitchen and prepare a summer soup – an avocado and cherry tomato gazpacho which we present in a long tall glass for maximum effect! After lunch, visit l’Abbaye de Fontfroide, a Cistercian monastery founded in the 11th century. Now privately owned, the abbey has been lovingly restored with a well-kept garden and peaceful cloister. On the way back to the boat, stop at Château Auris for a wine tasting. Tonight Rack of lamb is on the menu, this can be a tricky dish to cook correctly and we learn how to marinate and prepare this dish, also served with this is a rich sauce made with red wine and tarragon that goes wonderfully with this meat.

Back to the barge for another scrumptious lunch and a cruise to tonight's mooring in Le Somail.
Wednesday: Le Somail to Homps
Visit Minerve
After breakfast, relax on deck and watch the passing scenery. After lunch, you will visit the superb 11th century Cistercian Abbey de Fontfroide, with its noble cloister and a peaceful garden lined with cypress trees, followed by a wine tasting in the wild limestone hills of the Corbières.

Its now ruined castle was once a Cathar stronghold, besieged and captured by Simon de Montfort. On our descent back to the barge, we will stop and taste some wine in the Minervois.
Friday: Trebes to Carcassone
Visit Carcassonne.
Finish the week with a tour of Europe's largest medieval fortress - La Cité of Carcassonne. Admire the intricate fortifications of the two castellated walls, one inside the other, about a mile in circumference. The views from the battlements towards the Pyrenées are stunning.
